Uji (Porridge) With a Twist

Not every parent is lucky enough to have a happy eater. Some of us are faced with the challenge of finding new, interesting and nutritious meals for our somewhat picky and very difficult eaters. This is a recipe for an enriched porridge prescribed by our nutritionist which worked wonders for our child. Its ingredients help make up a balanced diet.

(Please note that the ingredients have been tweaked slightly and kindly ensure that your child is not allergic to any of the ingredients before preparing this snack for her/him. Please consult your nutritionist/pediatrician before preparing this for your child).

These ingredients make approximately one cup of enriched porridge:
200ml of milk
1 heaped table spoonful of wimbi flour (or based on desired thickness)
1 tablespoon of blue band (optional)
1 tea spoons of sugar
2 leafs of blended/finely grinded spinach

Procedure:
Step 1: Pour the milk into a sufuria and add the spinach and bring it to a boil.
Step 2: Mix the wimbi flour with 60ml of water and pour.
Step 3: Once the milk and spinach starts to rise, lower the heat and stir continuously to prevent the milk from over flowing for about 2 minutes.
Step 4: Add the wimbi mix and stir continuously to prevent any lumps from forming.
Step 5: Let it simmer for 15 minutes or until fully cooked.
Step 6: While still very hot add the blue band and stir until completely mixed.
Step 7: Pour the mixture into a cup and give it some time to cool before serving it to your child.
As you wait for it to cool, be sure to keep the porridge at a safe location away from your child to prevent any accidents or injuries.

This recipe takes care of the main components of a balanced diet (carbohydrates, proteins, vitamins, minerals and fats) which are all necessary for child development.
